Roasted Cherry Tomatoes    

Ingredients

  •  400-grams cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 teaspoon freshly ground black pepper
  • salt
  • Flat leaf parsley

Instructions:

This one is going to be really short, fast and a winner.

Put the tomatoes in the baking tray. Drizzle the olive oil on top of the tomatoes and sprinkle black pepper and salt. Toast them well by shaking the tray.

Cook at 350 F oven. Roast for 20 to 30 minutes depending on your oven or till the tomatoes burst out.

Sprinkle few flat leaf parsley on top of the roasted tomatoes as shown below. These roasted tomatoes are very healthy and full of flavor. I use them at times as a replacement for salads. They do just fine with a glass of wine and meat.
