Ingredients
- 2.5 cups bite size watermelon
- 1/2 cup feta cheese (crumble)
- 1/4 cup mint and pickled onion
- 1 teaspoon lime juices
- 1 teaspoon extra virgin olive oil(optional).
- 2 tablespoon Zzs pickle onion

It’s suppose to be a nice cool weather at this time but .. nope, it’s not and the hot season is on again and all i need is a salad and more salads for my meal. I love to try out different kind of salads and today i am doing the watermelon salad which also really suits the hot season. To get the best result, get a whole watermelon and store in the refrigerator for at least 4-6 hours. This recipe is for just one serving and you can add more according to your required quantity.
Cut the watermelon into bite size pieces and put it into a larger bowl where you can toast them easily. Take a small bowl and put lemon juice, some pepper,finely chopped mint, oil, feta cheese and my Zzs pickle onion. Mix them well. I am not putting any salt in this salad since feta cheese is already salty. Pour the mixture into the watermelon and toast them well. Sprinkle some more feta cheese on top of you salad and you are all set to go. This cannot get any simpler and faster. It’s a lifesaver when you need a fast , light and healthy diet.
