My easy crispy Tempura battered Vegetables

Ingredients

  • oil for deep fry (Canola/vegetable oil/light olive oil)
  • 3/4 cup plain flour
  • 1/4 cup of corn flour
  • 4-5 ice cubes
  • salt and pepper
  • 1/2 cup chilled sparkling water (depending on your flour measurement)
  • 100 gms of vegetables ( You can choose any kind of vegetables )

Instructions:

This one is going to be a real quick one!!  Let’s get started.
Put all the ingredients together in a bowl except the oil. Stir them until consistency of a pancake batter.

Do not stir excessively.

I love kales as they are super healthy and taste good too. Today, i am going to to use Kale, asparagus and zucchini/courgette.

Cut the vegetables uniformly, my preference is to keep them around 3 inches as i have shown below.

Heat up your oil in a deep frying pan at medium to high flame(i myself use a pan). alternatively you can use deep fryer.

Make sure the oil gets hot enough. Do not overcrowd the vegetables, this will make the batter more crispy.

Overall it will take around 5 minutes, fry the first side for 3 minutes and then the other side for 2 minutes, depending on your flame.
